Fruit Cocktail Salad Loaf

Fruit cocktail congealed salad loaf recipe.

Ingredients:

  • 1 envelope unflavored gelatin
  • 1 large can (29 ounces) fruit cocktail
  • syrup from fruit cocktail
  • 1 package, 3 ounces, cream cheese, softened
  • 1 cup mayonnaise
  • 1 package (3 ounces) cherry or raspberry flavored gelatin
  • lettuce leaves

Preparation:

Soften unflavored gelatin in 1/4 cup cold water. Drain fruit cocktail, reserving syrup. In a saucepan, heat 3/4 cup reserved syrup; add gelatin mixture and stir until gelatin is dissolved. Remove from heat; let cool. Beat cream cheese until fluffy; blend in mayonnaise. Gradually beat in gelatin mixture.

Dissolve flavored gelatin in 1 cup boiling water. Add 1 cup cold water or some syrup and water to total 1 cup. Chill until slightly thikcened. Put half of fruit in a loaf pan about 9 x 5 x 3 inches, add 1 cup of the flavored gelatin and chill until set. Pour in cheese mixture and chill until set. Top with remaining fruit and gelatin. Chill for several hours or until firm. Unmold on greens and slice to serve.
