
Ingredients:
5 potatoes
1/4 cup mayonnaise
1 tablespoon mustard
3 eggs
1 cup chopped celery
1/2 cup chopped onion
1/2 cup sweet pickle relish
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
ground black pepper to taste
salt to taste
Preparation:
- Place the potatoes in a medium saucepan and cover with cold water. Bring the water to a boil and cook until the potatoes are just tender. Drain.
- Meanwhile, in a medium bowl, combine the mustard and mayonnaise along with a pinch of salt and pepper.
- As soon as the potatoes are cool enough to handle, cut them into 1/2-inch cubes and toss them with the mustard mixture. Refrigerate.
- Boil eggs. Remove them from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- When ready to serve, stir the celery, red onion, and relish into the potato mixture. Adjust the salt and pepper to suit your taste.
